
Poke holes in your potato and run it under water before you bake it on 375 for 1ish hour, run under water again and flip it halfway through so it continues to steam. Potato should start to have sugary bubbles oozing out. I prefer to bake smaller potatoes I find the consistency is better. Also find if you refrigerate them for 24 hours before eating it makes the texture creamier as well.
